Paleo Plum Upsidedown Cake

This recipe is adapted for the paleo diet from a Rachel Ray recipe.

Paleo Plum Upside Down Cake

This is a family favorite, even though I have no photos! I made this with my 4 year old son and although it was a great bonding experience even though I wasn’t able to get any photos.

Ingredients:

  • 5 Tbsp coconut oil

  • 1/2 cup maple syrup (or 1 dropper of stevia liquid)

  • 1 tbsp almond butter (Artesana is a good brand if they have that in your area)

  • OPTIONAL: this is not paleo but if you are doing nutritious sugars this is a good one 1 TSP black strap molasses

  • Plums, sliced (4-6 large)

  • 1 cup finely grated coconut (use a coffee grinder)

  • 1/2 tsp baking powder

  • 2 eggs, lightly beaten

  • 1 1/2 tsp vanilla extract

  • 2-3 tsp maple syrup (or 1 dropper’s of organic Stevia extract)

  • 2 (literal) splashes of non-dairy milk (coconut, hemp or almond)

Directions:

Preheat the oven to 350 degrees

1. Heat on the stove top in a sauce pan (on medium low) the first 3 ingredients and stir until incorporated (DO NOT BOIL), remove from heat and set aside. This will be your “glaze” for the plums.

2. Combine the “batter” ingredients in a large bowl:

  • 1 1/2- 2 cups finely grated coconut (use a coffee grinder)

  • 1/2 tsp baking powder

  • 2 eggs, lightly beaten

  • 1 1/2 tsp vanilla extract

  • 2-3 tsp maple syrup (or 1 dropper’s of organic Stevia extract)

  • 2 (literal) splashes of non-dairy milk (coconut, hemp or almond)

The batter consistency will be goopy and frankly look a little gross (like watery Bisquick batter) but I promise it tastes great! If the batter is too thick add another splash of non-dairy milk. If it’s too thin add a 1/4 cup of coconut.  If you prefer a “crumble” topping omit the hemp milk and spread evenly on top of the glazed plums.

3. Add the sliced plums to the bottom of a round cake pan or 8×8 baking dish. Drizzle the glaze over the plums and spread the batter evenly over the plum mixture.

4. Bake for about 20 minutes (on 350) or until the fruit is bubbling up AND the crust has golden brown edges.
