For a new twist on an old favorite…
try this Chocolate Chip Zucchini Bread
This is a surprisingly delicious combination! It is a super simple treat to make with your little ones and enjoy throughout the week.
My son helps me cook most days. He FREAKED out when he saw me put in the zucchini and told me he wasn’t going to eat it.
But then it smelled like fresh chocolate chip cookies. Chocolate was our saving grace and was the only reason he was willing to give it a try.
He absolutely LOVED it!

Makes 1 deliciously moist loaf!
½ Cup of flour
1 tsp baking powder
1 ½ tsp ground cinnamon
1 tsp baking soda
1 ½ tsp cocoa powder (this makes the whole thing brown so you can’t see the zucchini bits. In the photo I used a coarse ground raw cacao.)
1 tsp salt
1 – 1 ½ cups mini chocolate chips
½ cup canola oil
1 cup Agave or date paste
1 ½ tsp vanilla extract
1 cup grated zucchini
Pre-heat oven to 325 degrees
Grease 1 bread pan or line a muffin pan with paper cups.
Sift together the dry ingredients (except for chocolate chips) in a medium bowl.
In a large bowl whisk together eggs, oil, vanilla sugar and zucchini until combined.
Stir in zucchini and fold in chocolate chips.
Bake for 45 minutes @325 degrees or until toothpick comes out clean.
